tastes of Greece -

Every Greek home has its "Vassilopita" cake on New Year's Eve ready to be cut after midnight by the head of the family with a lucky coin "flouri" hidden inside.
One slice for each family member and the luckiest, who will find the coin, will be blessed with good luck, health and happiness for the coming year!

I have tried different recipes all these years, more gourmet, modern ones etc. but we have come to the conclusion that the one we like the most as a family is a traditional one of an old chef called Nikos Tselemetes that my mom used to make every year diligently following his recipe
Ingredients:
6 cups flour, 3 tbsp. baking powder, 2 cups sugar, 150 gr. butter, 6 eggs, juice and zest of 1 orange, 1 shot of brandy, powdered sugar
Directions:
Beat the egg whites into a meringue
In a mixer, beat the yolks with the sugar well
Add the melted butter, juice, zest and brandy
Add half the amount of flour and half the meringue
Mix well with a ladle and add the remaining flour, baking powder and meringue
Pour into a buttered pan and put the coin
Bake at 180 degrees for 60 minutes
Serve on a plate and sprinkle with powdered sugar
Happy 2021!!!
